Belgian Endive and Radicchio are in the Chicory family and are good sources of inulin which is great for your gut microbiome.
Arugula is a cruciferous vegetable high in sulfurophane which is a powerful antioxidant and an NFR1 activator.
Add some pecorino romano or even parmigiano reggiano cheese to kick up a notch, both are sources of C15 and CLA.
Toss a couple of olives and nuts on top. BOOM!
A Honey Dijon Mustard Vinegrette (or Allulose sweetened) supercharges the sulfurophane in the arugula.
