One of the many wonders of #WHY2025 was the lovely people of Crumpet Camp. Over the course of the event they cooked and served over 250 crumpets to any hungry hacker that came by.
People from all over came by for a tasty British snack. And as I sat there munching on crumpets I listened to the reactions of those trying them for the first time.
After a few dozen. I cracked.
"That's surprisingly good" says someone with an accent indicative of foreign lands.
If course it's fucking good. The lovely people of camp crumpet have gone to a lot of effort to bring these to camp, cook them, and give them away to anyone who comes by. What else did you expect? They're not going to do that for something that isn't good.
Eventually I challenged some of those saying this. Why were they surprised?
"Cos it's British food"
"So?"
"Your food sucks"
"Such as?"
"Um... Uh... Ah... Oh"
This exchange happened a few times. With different people. 2/n
One person commented on how it sucked like Dutch food sucked. Which I could not resist biting at.
"Dutch food can actually be really good" I respond.
"Really?" Says a Dutch resident of British origin who was in ear shot.

"A delicious Hachee, stamppot boerenkoel, or a draadjesvlees, cooked for 3 hours in a little butter until it falls apart when you touch it with a fork. Delicious and tender. Served with a simple mashed potatos. It's wonderful"
"yes really. But" and here it's a big but. "You won't make a good Dutch meal if you're buying the ingredients from supermarkets, the quality is so poor due to a race to the bottom. The potatoes are the size of golf balls, the onions are flavourless, & tiny, cooking with such ingredients is laborious and the result flavourless"

Japan. Notoriously great food. Nearly zero spices, and most of those are imports. Not a lot of variety (broadly speaking; it's an island) of plants but wow, great food there!

Mexican and native American derived food. The opposite (sic) of Japanese food; often cheap ingredients, lots of spices! Lots of "poor people's food". But so much of it is great! And there's great subtlety amongst even the peppers and spices.
We all eat what grows around us (or did...). Lots of us are shitty cooks (we've improved a lot; pandemic was a big jump up).
But talking about food is a bit like talking about sex; many people are really weird about it. And bigoted. And stuck in bad habits.

You're also absolutely right about where the Dutch and English cuisines meet hand in hand is the supermarkets constantly cheapening the ingredients used in day to day cooking.
(I constantly talk shit on French food for being bland and it’s a common jest that French food overly depends on grease to make up for its blandness where I grew up)
One big thing people don't understand about balancing flavors is acidity and how it affects the overall profile. Sometimes just adding a teaspoon of vinegar is enough to make all the difference in a dish - you dont actually taste the vinegar but it opens a bright and lively taste path that you are definitely aware of.
The current (possibly just American) trend of putting jalapenos in everything is getting old af.
Yup, supermarkets are to blame. I was born in Cheshire long ago. Cheese from the grocer's was Cheshire cheese by default. It came from local farms via a local wholesale market. It arrived as a 'wheel' and was sold in wedges with a rind on. It was crumbly and tasty. Proper Cheshire cheese is now made on a single farm and sold at a premium price in speciality shops to wealthy 'foodies'. Supermarkets sell tasteless, damp, plastic-wrapped slabs of 'Cheshire Cheese' for the rest of us.
I'm generally unable to understand people who complain about Dutch food being bad when their frikandel, kroket, etc are some of our favorite snacks to eat at any train station, period
British food isn't bland. We had war rationing, and a whole generation became accustomed to simple food because that's all that was available. Returning American troops spread the myth that our food is bland, not understanding that we were on a war footing. The myth persists to this day.
Starting in the 1970s, foreign travel became more affordable, and our tastes were once again diversified. Today there's more spicy food sold in the UK than anywhere else in Europe! We love spice!
I'm English (not British) and I think that the only nice food in England has come from another culture. The only 'English' food I can think of is stodgy and tasteless, such as fish and chips, full English (cooked breakfast) or what we call 'Sunday dinner', which is roast meat, boiled root vegetables, Yorkshire pudding (baked pancake) and gravy. Nothing to compare to the tasty food from other cultures. That's why our most popular dish is chicken korma lol.

When I started this "project" last year around October I never imagined how much work would be involved, the time required and the hardship of having to prioritize.
But the vision is clear; threat intelligence for cybersecurity professionals. I'm quite frankly tired of "good" intelligence mostly being available to bigger corpos. I want to try and make a dent in this space.
