I have been meaning to post it but the Greggs mention reminded me. I don't know about the Greggs Mac and Cheese as I never go there but I found about about it from an article in New Scientist of all places and was intrigued. It is now my go to recipe, even with a bit of toasting on the final product. No roux to make. Variants are easy as well.
