@Max_Imum No you need sous vide. I do use the InstaPot company's sous- vide machine which is $75 on Amazon and has worked greatly for the past year. Before that I had the Anovo one, which broke.

Your wife may yell at you for putting warm stuff in the fridge, so wait like 10 minutes if you want but get it in there as bacteria here starts to die off after the 36 hours, that has been scientifically proven.

@Max_Imum And finally, you don't want the mason jar "swimming" just because it will butt up against your sous vide machine which seems mechanically problematic possible... so put one piece of tape on the ceran wrap.... and the other side of that tape on the big ass steel pot.
@Max_Imum One tip: You're supposed to cover the mixture (which I put in the big mason jar) LIGHTLY... because possibly this is aerobic process. Not sure , but I think. Anyway... if you cover with ceran wrap, it will suck to the glass and make a seal. So just jam a plastic straw under the loosely-fitted-ceran-wrap..... and you'll still allow air to get inside. I think it made a big difference in quality.
@Max_Imum If you don't have a big ass pot to use as I just talked about... Walmart has big ass supposedly stainless steel pots believe it or not for like $8.00. Now more or less a couple of bucks but amazing deal. Yes they're dinky... but for utilitarian uses like this? Gold. Because you can also put them on fire or whatever witout worrying for other projects.
