I'd try to check if the previous version of the package is available on apt or snap. in case it's not, I'd get the previous version using an older Ubuntu version running inside Distrobox.
@pluralistic, two ways that come to mind. I'm assuming that you're running 25.04 (plucky).
• Download older versions of gimp and the packages on which it depends via packages.ubuntu.com (check versions, though; only download dependencies which aren't satisfied by already-installed packages) and install via dpkg. You'll need to mark the installed packages as held.
• Add the previous release (oracular, or an older one if you want a version older than 2.10.38) to your sources.list (or create a new file for it in /etc/apt/sources.list.d/), make sure that /etc/apt/apt.conf contains a line “Apt::Default-Release "plucky";”, run “apt update” then “apt install -t oracular gimp”. It's worth marking the newly-installed packages as held.
There may be conflicts to resolve. It should be easier to handle these via the second method. (I prefer to use aptitude's curses UI for this.)
Pinning may be helpful too: see the apt_preferences man page.
I'd try getting the sources file(s) from the previous version of Ubuntu, including the security and backports ones. Put them in and update, then select the older version of Gimp from the available versions list. That should install any dependencies on older versions of libraries as needed without disrupting newer versions.

There are a lot of workflows possible in GIMP, and it's easy to miss how some are affected (for instance, pasting as a new layer versus as a floating selection seems to have been a very polarizing change).
For example, every time I'm making a complex path or lasso selection and I middle-click to move the canvas, the selection disappears and I lose all the work.
Tools always revert to nonsensical defaults. My chosen brushes disappear when I switch tools. Select tools flip from "add" to "subtract" with disastrous results.
Partially transparent layers with blurred halos turn into giant, opaque blobs when files are saved and re-opened (I have to save as PSD!)
@CmykStudent I'm SO excited by GImp3's possibilities, but this is a tool I use every day, for hours, to do something important, and it has been failing me in significant, extremely time-consuming ways, every single day. I literally *can't* get my work done if I have to use Gimp3. There isn't enough time to re-do (and re-re-re-do) my work over and over when the system fails me.
That's not even counting the zillion times it crashes and takes my unsaved work with it.
@CmykStudent I appreciate the offer of help but just compiling good bug reports on this stuff feels like a full-time job. I kinda want to go hide out in Gimp 2.x for six months and then re-emerge and see whether Gimp3 is ready for primetime.
@CmykStudent You mention pasting a new layer: 85% of the time, if I make a selection and do ctrl-c/v, it pastes in place. The other 15% of the time, with ZERO rhyme or reason, it pastes at a 20-200px offset. The "paste in place" keyboard shortcut would solve this, except 50% of the time, that keycombo does nothing and I have to go select the menuitem.
Fair! The most important thing is that you can accomplish your tasks - whether with 2.10 or 3.0.
I haven't come across most of the bugs you mention, so I'll look into it. The "disappearing brush" might be due to a filtering bug - if so, it's fixed in source and should be available in the next release. Our co-maintainer is doing a lot of post-3.0 code clean-up and review, so hopefully that will capture more problems you mentioned.
@CmykStudent One more thing: dialogs *always* spawn in the middle of the image, even if I've dragged them somewhere else the last time they're used. Every time I want to adjust curves, say, the dialog pops up bang smack in the middle of the image and I first have to drag it away before I use it, because otherwise I wouldn't be able to see what I'm doing. A small annoyance, but I have to do this a zillion times/day.
