@rk I’m no purist, even if I grew up in Texas, but if you ever want to try a old-school Texas chili (sans tomatoes and beans) Lisa Fain’s is excellent. Chilies are easily available in a Mexican grocery.
An authentic Texas chili of slowly stewed chuck roast in a gravy made of seven different chile peppers including ancho, pasilla, guajillo, and chipotle. This is a real-deal bowl of Texas red, made without tomatoes or beans.
@petrillic The masa is the most important part there. Too many chilis omit it and thus are too watery. Chili’s supposed to be thick, and the meat in small (but not ground up!) pieces.
I did have one family friend who put beans in their chili and would mush up some but not all of the beans to thicken it, almost like red beans and rice (not surprising, given I grew up in Cajun country). That’s also a fun thing to try.
@rk a side of her borracho beans will change your life. They are a regular part of my life and deeply comforting. They are best served on the side or as their own dish. I’m happy with them all by themselves for dinner any night.

But you're right, sours (read: acids) are a common addition to sauces and cocktails to "balance" flavours. Cola is a good example of this. I'm guessing vinegar is common because it's cheap, edible, and strong.
There was a cooking video I saw recently (can't remember which one) that said "If your sauce feels like it's missing something, it's probably acid. Try adding lemon/etc."

@Pedr01gb, sorry, it wasn't mean as atack, only the bad surprises with the new Laptop with Windows 11, where it isn't even possible by default to get rid of an Thumb thick Taskbar, where the only possible setting is to put the Icons on the left or in the middle, not draggeable to the side or on the top, like in W10, the Startmenu without the possibility to ad apps without diving through submenus, etc. THAT is what I mean, all the flexibility which are great in W10 and older versions, eliminated in W11, ignoring the preferences and needs of the user. WHY?

, that is what i thought, luckily after some research, I found an OpenSource app, something like an userscript manager, which is capable with scripts to fix the UI and handling.
So I have again the UI and feeling of W10 in W11, the start menu with my apps and a thin task bar on the top of the screen to my like.
But certainly it's outrageous to have an extra app to restore what was previously normal in Windows.
If it's of interests, the app is WindHawk (windhawk.net), which contents a lot of userscripts for every aspect of Windows, eg taskbar, Start meu, explorer and much more. Changes are instant, no restart needed, so you can see if i to your like and restore it if not, desactivating the script. Scripts are visible in the app and even editable and customizable.
I consider it essential for all the suffered Windows 11 users like me.

i am my coffee machine, just a simple stove top espresso machine, a simple milk jug, works on any cooking surface, electric, gas, wood stove, campfire, rocket stove. Always great coffee, coffee pot & jug over 30 yrs old now! Only parts renewed are the rubber seals. Very economical, very planet friendly, imho of course. Other (younger) members of my family are ALWAYS trying to convince me to ditch my antiquated ways! Horrors! Never!
Poor design like this is mad. We have a clothes airer that can only be closed by simultaneously holding two clips at opposite sides upon which it quickly folds and traps your fingers. At no point in the design process did anyone get an idiot off the street (e.g. me) and observe while they attempted to fold it. Or maybe they did, but felt that their target customer base had too many fingers.
