I need to talk, not just ask for money. I'm so tired of fighting this fight. The HR department is threatening to fire me if I can't get the doctor to submit short-term disability paperwork this week. I just want to get better, and for things to go back to normal. But when your doctor and your insurance company screw you over and leave you begging for money from strangers just to feed your family, the stress just makes it harder to get well. My immune system is taking a battering from multiple angles. Add to that, I can't seem to stay asleep for more than 5 hours, so I'm exhausted all the time. I am weary in my bones. How can I have hope through all this? I'm really struggling with that right now. I need to feel some hope.

@rk I’m no purist, even if I grew up in Texas, but if you ever want to try a old-school Texas chili (sans tomatoes and beans) Lisa Fain’s is excellent. Chilies are easily available in a Mexican grocery.
An authentic Texas chili of slowly stewed chuck roast in a gravy made of seven different chile peppers including ancho, pasilla, guajillo, and chipotle. This is a real-deal bowl of Texas red, made without tomatoes or beans.
@petrillic The masa is the most important part there. Too many chilis omit it and thus are too watery. Chili’s supposed to be thick, and the meat in small (but not ground up!) pieces.
I did have one family friend who put beans in their chili and would mush up some but not all of the beans to thicken it, almost like red beans and rice (not surprising, given I grew up in Cajun country). That’s also a fun thing to try.
@rk a side of her borracho beans will change your life. They are a regular part of my life and deeply comforting. They are best served on the side or as their own dish. I’m happy with them all by themselves for dinner any night.
It doesn’t take much to please me. Give me a big, steaming bowl of charra beans, borracho beans or even plain, porky pinto beans and I will be delighted.
@Viss Sometimes hot sauces are X and Vinegar just because X wouldn't be shelf-stable without it.
But you're right, sours (read: acids) are a common addition to sauces and cocktails to "balance" flavours. Cola is a good example of this. I'm guessing vinegar is common because it's cheap, edible, and strong.
There was a cooking video I saw recently (can't remember which one) that said "If your sauce feels like it's missing something, it's probably acid. Try adding lemon/etc."
Does the British version of chilli con carne have its own merits, or is it an affront to one of the American southwest's proudest pieces of culinary heritages?
@scottmichaud @Viss I always put some vinegar or lemon in thick pan-sauces to create really bright top notes that play beautifully off a pork loin or chicken breast.
