Gotta be careful with the Mexican ungraded meat 😏 I've seen some pretty unappetizing rib eyes as a meat cutter. The meat would be like a purplish brown and fat extra yellow and looked like the cow must have been in bad shape because the muscle tissue wasn't holding together right either

The Mexican Ribeyes were generally smaller as well. So you could cut a decent thickness steak and keep the weight down.

People still talk about the Steak Night Special that I used to run with those inexpensive ribeyes.
