Well what I'm doing is offered myself to install Signal or Deltachat on their phones. Specially to people who are normal users (friends who don't care or don't know how to) and by now a few had say yes. Some just install these apps without a problem. Sometimes I just tell them:"you probably have a dozen apps that you don't use, so why not this one so we can message?" There's probably other options.
