Title misleading: you did not lose "the" AAC codec after upgrading. You're asking for advice regarding a custom solution that stopped working after the upgrade.
The AAC codec is unavailable in Debian 12 bookworm.
In the case of PipeWire its support (see the 1021370 request) requires the non-free libfdk-aac2 package. A request to provide free version of the package was declined due to possible licensing and patent issues (see 981285). The only workaround is to build the AAC Bluetooth plugin from sources.
I couldn’t find instructions from Bluez to install the source and I didnt want to risk breaking my current install by just guessing hence why I went with the solution posted on Reddit.

Reminded of all the times in the 2000s when I had what I would later discover to be gout flares but multiple doctors told me I was just fat and putting too much weight on my joints. If you don’t know, gout is a form of arthritis and one of the most acutely painful conditions known to medicine.
Yeah, it’s a form of joint inflammation, to begin with, but it’s progressive if untreated and can really fuck you up. Even in the early stages it’s definitely top ten most painful things ever. 10/10 pain. A common thought is that you’d rather it be amputated.
I’ve cut my own toenail down the bed and ripped it off with pliers, I’ve had a nail through my foot, a heart problem that caused pain like a rusty knife being dragged through my sternum to my jaw, and a bowel obstruction where they had to give me IV morphine in the ER. It’s worse than those.
Several. Colchicine, NSAIDs, and corticosteroids for attacks & allopurinol and febuxostat to (ideally) prevent attacks. Dietary changes can help but it’s not caused by diet, just exacerbated by eating certain things. It’s an inborn error of metabolism.
There’s no cure though. And there are drawbacks to all of those drugs, and I know from personal experience that allopurinol causes me to have a massively disabling attack, because changes to your serum uric acid levels *either* way can cause that, even if lowering them helps in the long run.
Honestly the way it’s seen by doctors as kind of trivial is so fucking weird and that’s what really upsets me. It’s a cultural bias, almost a delusion.
I know it used to be attributed to overeating? that was always my vague sense of what it was. and I hadn't realized it was even still a thing honestly.
It’s not uncommon. About 4% of the US population has it. And it’s not at all related to overeating. That said, if you have it, there are things you should not eat, that are high in purines. Shellfish, aged cheeses and meats, alcoholic beverages, etc.
But for whatever reason it’s seen as this old-timey sore foot thing where you take a couple Advil instead of it actually being way past pain they’ll even now prescribe oxycodone for.
